THE AUTHOR: Ludovic Bisot, 57, is a cheesemonger in Rambouillet (Yvelines). A native of Burgundy, he graduated from EM Lyon. After a career in international trade and strategy consulting, at 42 he made a radical career change to dedicate himself to his great passion: cheese. In 2010, he took over a small cheese shop in Rambouillet, which he renamed Tout un Fromage (A Whole Cheese). A lover of challenges, he earned the title of Meilleur Ouvrier de France (Best Craftsman of France) in 2015. In addition to his shop, Ludovic has been involved in training (vocational training certificates, hotel management schools) since receiving this award. Creative and playful, he invented "fromagination" (a play on words combining "fromager" and "fromager," meaning cheese) and founded, with friends, the Ligue des Fromagers Extraordinaires (League of Extraordinary Cheesemakers), whose mission is to "put cheese everywhere, and especially where you least expect it." His credo and the spirit of his book can be summed up in one phrase: the love and humor of cheese.
