Let's be honest: eggplant is often a child's nightmare. So we decided to take on the challenge! We took this unloved, dripping and hated vegetable — and transformed it into a star on the plate.
In this issue, we explore it in all its forms: grilled, disguised, even sweet! We delve into its origins, its vibrant colors, its unusual textures, and its many ways to cook it (without complaining). Thanks to a team of talented individuals (we pinch ourselves with each issue) — illustrators, writers, a chef, photographers, and foodies — we manage to make the eggplant a star… almost as beloved as the French fry.
