Fifty years of French culinary heritage. In 2025, Maison Loiseau celebrates its fiftieth anniversary. This is an opportunity to appreciate the gastronomic legacy of Bernard Loiseau, perpetuated by the chefs who followed him in the kitchens of the Côte d'Or, such as Patrick Bertron and, today, Louis-Philippe Vigilant. The Loiseau style remains a benchmark worldwide, emphasizing authentic flavors, innovative techniques like deglazing with water, the importance of vegetables, and a commitment to supporting local producers and their regions. In this idyllic setting, Louis-Philippe Vigilant and his wife Lucile, the pastry chef, offer their interpretation of this timeless style, both à la carte and in set menus, continuing to refine it with their own creations and impeccable service. Philippe Labro's preface and Guy Savoy's testimony offer a wealth of recollections about the legacy left by the chef from Saulieu, while journalist Jean-Paul Frétillet takes the time to explain the characteristics and specificities of a style so emblematic of the golden age of nouvelle cuisine.
