Alain Chapel's restaurant in Mionnay, near Lyon, was one of the best in France for almost twenty years. Now deceased, this great chef helped to rejuvenate French cuisine, adapting it to our lifestyle by making it lighter, while respecting the solid and essential classical technical foundations.
Convinced that recipes should not be immutable commandments but an "expression of his desires and gourmet emotions", he invites us in this work, the only one he has published, to wander in his imagination, and to taste his gourmet impulses as a passionate great chef.
