Originally from the south of France, Stéphane Modat settled in Quebec City over 10 years ago. Upon arriving in the city, he first worked at the restaurant Initiale, then became the chef and co-founder of the renowned restaurant Utopie. In 2009, he began his culinary collaborations with François Chartier, with whom he co-authored the successful books *Les recettes de papilles et larmes et larmes* (Recipes of Taste Buds and Molecules) and the *Papilles pour tous!* (Taste Buds for Everyone!) collection. From 2013 to 2021, he was the chef of the restaurants at the Fairmont Le Château Frontenac. He is the author of the book *De ma cours au château* (From My Courtyard to the Castle) , published in 2017.

For over 12 years, photographer Frédéric Laroche has traveled across Canada in search of images of landscapes and outdoor activities, particularly hunting and fishing. While working on videos, documentaries, and programs on these subjects, his passion for photography has only grown.

The book "Cuisine de chasse" was born from his meeting with chef Stéphane Modat, with whom he shares a taste for cooking, but also a desire to raise awareness of the richness of Quebec's terroir and the need to exploit our resources in a respectful and responsible way.
