Baloney is also a return to the roots and a tribute to local products with more than 70 recipes, some of which are signed by illustrious figures in gastronomy (Patrice Demers, Stefano Faita, Stéphane Modat).

Chef at Ferme des Quatre-Temps, Jean-Simon Petit has been immersed in the restaurant industry for over 20 years. His vision and creativity have earned him the title of Artisan of the Year at the Lauriers de la Gastronomie awards, as well as three gold medals at the Mondial Rabelais du Saucisson.
